Yes. Choose the number of apps at checkout and each app gets its own dedicated set of testers and its own 14-day testing window, running in parallel if you like. Setup begins within 4-6 hours of your order, any day of the week, weekends included. As soon as our testers opt in to your closed test, the 14-day clock starts. Most developers order in the morning and see testers active the same day. End to end, plan for roughly 15 days from order to production application, including Google's own review time.
